I often get the question "is chocolate gluten free?" Followed by "I CAN'T GIVE UP MY CHOCOLATE!" 

Unfortunately most chocolate on the market today is filled with gluten and other nasty fillers that your body doesn't need and can't process. For example, I checked out one of the largest distributors of chocolate, Hershey's, website for their nutrition facts, and saw they had two "gluten free options" for chocolate. TrueGlutenFree Stir Fry: Gluten-Free, Soy-Fee, Corn-Free, *Paleo Option

 Ingredients:

  • 1Tablespoon of Coconut Oil; I love Tropical Traditions
  • 5 Handfuls of Kale
  • 2 Carrots
  • 1 Parsnip
  • ½ Sweet Onion
  • 1 Pepper; any color will do
  • ½ Avocado
  • ~ 1Teaspoon Raw Coconut Aminos; try Coconut Secrete. This is a great gluten-free and soy-free alternative. I’ve found soy hard to digest being gluten sensitive.
  • ~ 1 Teaspoon Dulse Flakes; has a great mild flavor and especially great to add if you have hypothyroidism as it provids a great serving of iodine
  • ~ 1 Teaspoon Sesame Oil
  • Optional: Wild Rice; try Goose Valley Organic Wild Rice

How To Have Gluten Free Treats In Moderation

I don’t know about you, but I have a hard time consuming my gluten free baked goods in moderation. To help with my portion control I started making my baked good treats in mini-muffin tins. Here is one of my favorite Pumpkin Muffin Recipes for fall: 

 1 cup blanched almond flour
1⁄4 teaspoon celtic sea salt
1⁄2 teaspoon baking soda

1 tablespoon cinnamon
1⁄2 teaspoon cloves

1⁄2 cup roasted pumpkin or pumpkin puree
2 tablespoons honey

1⁄4 teaspoon stevia

3 eggs
**Optional – top with walnuts or chocolate chips (I recommend using Enjoy Life Chips or Equal Exchange)
