I am currently following a yeast free diet (very similar to the Candia Diet), which means I can’t consume any foods that convert to sugar to quickly. Processed and refined sugar has to be 100% avoided. We should all try to cut back on refined sugar regardless, and swap it for maple syrup, honey, agave nectar, and stevia.


For the past 8 weeks I’ve been dying not being able to make my muffins and I was excited when I came across this gluten free banana muffin recipe that contains no sugar!! Check it out I found it on Once A Month Meals:


4 ripe bananas
4 eggs
1/2 cup nut butter (I used almond)
1/2 cup coconut flour
2 tablespoons coconut oil
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup coconut flakes
top with walnuts (optional) 

Here is how I make it:

  1. Bake at 350°
  2. In my VItamix I toss in the bananas and all liquid ingredients. Next I throw in all dry ingredients and blend for another minute.
  3. I bake them in my Bennington Pottery Muffin Tins. Aluminum is a blocking factor, so you should consider swamping out your baking gear if you are currently using any non-stick pans. Bennington Pottery bakes your muffins perfectly – fluffy and moist. Bake them for about 18 minutes and enjoy!
